Ingredients

  • 2 cups cooked rice
  • 3 cups shredded carrots
  • 2 cups grated cheese
  • 1/2 cup milk
  • 2 beaten eggs
  • 2 tablespoons minced onion
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper

Instructions

  1. Combine all ingredients, except 1/2 cup cheese, in a bowl.
  2. Transfer the mixture to a greased 1 1/2-quart dish.
  3. Sprinkle the remaining 1/2 cup cheese on top.
  4. Bake in a preheated oven at 350°F for 45 minutes.
