Houston'S Spicy Caesar Dressing

Ingredients

  • 1 egg yolk (optional)
  • 1 tablespoon garlic, minced
  • 2 teaspoons Dijon mustard
  • 2 anchovy fillets, minced
  • 1 1/2 teaspoons pepper, coarsely ground
  • 1/4 teaspoon salt
  • 1/2 teaspoon coriander, ground
  • 1/2 teaspoon cumin, ground
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons water, cold
  • 1/2 cup olive oil, extra virgin
  • 1/2 cup canola oil
  • 1 1/2 tablespoons sambal chili paste (Thai chili paste available at Asian markets)
  • 1/2 lemon, juiced
  • 1/2 lime, juiced
  • 3 tablespoons parmesan cheese, freshly grated

Instructions

  1. Combine yolk, garlic, mustard, anchovies, pepper, salt, coriander, cumin, worcestershire sauce and water in a food processor. Process until smooth. With motor running, pour oils in a slow, steady stream into dressing mixture. When all oil has been incorporated, add chili paste, lemon juice, lime juice, and parmesan cheese. Process until smooth.
