Iberian Shrimp
Ingredients
- 5 teaspoons olive oil ⓘ
- 1/2 cup chopped red pepper ⓘ
- 1/2 cup chopped onion ⓘ
- 3 cloves garlic, minced
- 2 ounces cooked ham, chopped (may use bacon if you wish) ⓘ
- 1/2 cup dry sherry ⓘ
- 1/4 cup chopped parsley ⓘ
- 2 tablespoons fresh squeezed lemon juice ⓘ
- 1/4 teaspoon thyme ⓘ
- 1/8 teaspoon cayenne pepper
- 3/4 cup plain breadcrumbs ⓘ
- 1 lb raw shrimp, peeled ⓘ
Instructions
- Preheat oven to 400 degrees.
- Saute the red peppers, onion and garlic in 1 tablespoon olive oil until the vegetables are softened.
- Add the remaining ingredients including breadcrumbs, except the last teaspoon of olive oil and saute for a few minutes, until shrimp just begins to turn opaque.
- Put into a casserole and drizzle with remaining teaspoon of olive oil.
- Bake for 10-15 minutes until shrimp is just cooked through.
