Bacon Bit Carbonara

Ingredients

  • 6 ounces pasta, I used spaghettini
  • 1 garlic clove, minced
  • 1 green onion, green part only
  • 14 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 tablespoon pine nuts
  • 1 fresh mozzarella balls, golf ball or 1 bocconcini, sized
  • 1 -2 tablespoon feta cheese
  • 2 tablespoons sour cream
  • 1 pinch cayenne
  • 1 pinch oregano
  • 1 pinch salt and pepper
  • 12 cup green peas
  • 2 eggs
  • 2 tablespoons milk
  • 3 tablespoons bacon bits

Instructions

  1. Cook pasta.
  2. In a skillet, heat some olive oil.
  3. Add minced garlic, oregano, salt, pepper, cayenne, bread crumbs and pine nuts.
  4. Stir often until toasted.
  5. Remove from heat.
  6. Chop green onions.
  7. Mince fresh mozzerella.
  8. Scramble egg with milk.
  9. Add a bit of mozzeralla to eggs, and stir and cook/scramble as you would for normal eggs.
  10. Defrost peas in colander.
  11. Drain pasta over peas.
  12. Retaining some pasta water, put pasta, peas, eggs, feta, sour cream, bacon bits and onion into same pot.
  13. Toss lots.
  14. Pepper heavily.
  15. Serve with salad and crusty bread.
