Bacon Bit Carbonara
Ingredients
- 6 ounces pasta, I used spaghettini ⓘ
- 1 garlic clove, minced ⓘ
- 1 green onion, green part only ⓘ
- 14 cup breadcrumbs ⓘ
- 1 tablespoon olive oil ⓘ
- 1 tablespoon pine nuts ⓘ
- 1 fresh mozzarella balls, golf ball or 1 bocconcini, sized ⓘ
- 1 -2 tablespoon feta cheese ⓘ
- 2 tablespoons sour cream ⓘ
- 1 pinch cayenne ⓘ
- 1 pinch oregano ⓘ
- 1 pinch salt and pepper ⓘ
- 12 cup green peas ⓘ
- 2 eggs ⓘ
- 2 tablespoons milk ⓘ
- 3 tablespoons bacon bits ⓘ
Instructions
- Cook pasta.
- In a skillet, heat some olive oil.
- Add minced garlic, oregano, salt, pepper, cayenne, bread crumbs and pine nuts.
- Stir often until toasted.
- Remove from heat.
- Chop green onions.
- Mince fresh mozzerella.
- Scramble egg with milk.
- Add a bit of mozzeralla to eggs, and stir and cook/scramble as you would for normal eggs.
- Defrost peas in colander.
- Drain pasta over peas.
- Retaining some pasta water, put pasta, peas, eggs, feta, sour cream, bacon bits and onion into same pot.
- Toss lots.
- Pepper heavily.
- Serve with salad and crusty bread.
