Ingredients

  • 1 stick butter
  • 7 oz. coconut
  • 6 oz. slivered almonds
  • 3/4 cup brown sugar
  • 1/2 gallon lemon ice cream, softened

Instructions

  1. Melt butter in a saucepan.
  2. Add coconut and slivered almonds, then brown the mixture.
  3. Stir in brown sugar until melted.
  4. Line a 9 x 13-inch pan with half of the mixture, pressing it into an even layer.
  5. Spread softened lemon ice cream over the crust.
  6. Top with the remaining coconut and almond mixture.
  7. Freeze until firm.
  8. Cut into squares and serve.
