Ingredients

  • 1 c. butter or margarine
  • 2 c. sugar
  • 2 eggs
  • 1 c. cold mashed potatoes
  • 1 tsp. vanilla extract
  • 2 c. all-purpose flour
  • 1/4 c. baking cocoa
  • 1 tsp. baking soda
  • 1 c. milk
  • 1 c. chopped nuts

Instructions

  1. In a mixing bowl, cream butter and sugar until fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Blend in potatoes and vanilla.
  4. Combine flour, cocoa and baking soda.
  5. Add alternately with milk, blending well after each addition.
  6. Stir in nuts.
  7. Pour into a greased 13 x 9 x 2-inch baking pan.
  8. Bake at 350° for 40 to 45 minutes or until cake tests done.
  9. Cool on a wire rack.
