- Mix the crushed pineapple, chopped raisins, coconut, chopped pecans, sugar, and melted margarine until well combined.
- Spread the mixture between three cookies, creating sandwich-like layers.
- Repeat with remaining cookies and mixture.
- Place the assembled cookies in the refrigerator and let sit overnight or for at least 6 hours.
- A few hours before serving, top each sandwich with whipped cream or Dream Whip.
- Sprinkle with additional coconut and top with a cherry if desired.
