Ingredients

  • 1 box scalloped butter cookies
  • 1 small can crushed pineapple
  • 1 cup chopped raisins
  • 1 cup coconut
  • 1 cup chopped pecans
  • 1 cup sugar
  • 1 stick melted margarine

Instructions

  1. Mix the crushed pineapple, chopped raisins, coconut, chopped pecans, sugar, and melted margarine until well combined.
  2. Spread the mixture between three cookies, creating sandwich-like layers.
  3. Repeat with remaining cookies and mixture.
  4. Place the assembled cookies in the refrigerator and let sit overnight or for at least 6 hours.
  5. A few hours before serving, top each sandwich with whipped cream or Dream Whip.
  6. Sprinkle with additional coconut and top with a cherry if desired.
