Ingredients

  • 2 c. plain flour
  • 1 c. chopped walnuts
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 3 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. shredded carrots
  • 1/2 c. milk
  • 1/3 c. oil
  • 1 egg

Instructions

  1. Preheat oven to 350°F (175°C). Spray a loaf pan with Baker's Joy or non-stick spray.
  2. In a mixing bowl, combine flour, chopped walnuts, sugar, brown sugar, baking powder, cinnamon, and salt. Mix until well blended.
  3. Stir in shredded carrots, milk, oil, and egg just until moistened.
  4. Pour the batter into the prepared loaf pan.
  5. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
