Ingredients

  • 1 lb ground beef
  • 1/4 cup chopped onion
  • 1 envelope taco seasoning mix
  • 1 (8 oz) can stewed tomatoes, drained and chopped
  • 1 cup frozen corn, thawed and drained
  • 3 eggs
  • 1 1/2 cups milk
  • 2/3 cup buttermilk baking mix
  • 1/3 cup yellow cornmeal

Instructions

  1. Grease a 10-inch by 1 1/2-inch pie plate.
  2. Cook and stir ground beef in a skillet until browned; drain excess fat.
  3. Stir in chopped onion and taco seasoning mix. Spread the beef mixture in the prepared pie plate.
  4. Sprinkle with drained chopped stewed tomatoes and thawed, drained frozen corn over the beef mixture.
  5. In a bowl, beat eggs, milk, buttermilk baking mix, and yellow cornmeal until smooth.
  6. Pour the batter into the pie plate over the ingredients.
  7. Bake at 400°F (200°C) for 30 to 35 minutes or until a knife inserted in the center comes out clean.
  8. Allow to cool for 5 minutes before serving.
