Ingredients

  • 1 Tbsp. butter
  • 1 large onion, chopped
  • 1 large tomato, chopped
  • 1 (4 1/2 oz.) can chopped green chilies, drained
  • 1 (4 oz.) can sliced ripe olives, drained
  • 2 c. shredded Colby-Jack cheese
  • 1/2 tsp. ground cumin
  • 1/4 tsp. salt
  • 1/2 c. Bisquick mix
  • 1 c. milk
  • 2 eggs

Instructions

  1. Preheat oven to 400°F (200°C). Spray a 9-inch pie plate with cooking spray.
  2. Melt butter in a 10-inch skillet over medium heat. Cook chopped onion in butter, stirring, until tender. Remove from heat.
  3. Stir in chopped tomato, drained green chilies, drained olives, 1 cup of shredded cheese, ground cumin, and salt.
  4. Spread the vegetable mixture evenly in the prepared pie plate.
  5. In a bowl, stir together Bisquick mix, milk, and eggs until well blended.
  6. Pour the Bisquick mixture over the vegetable mixture in the pie plate.
  7. Bake uncovered for 30 minutes.
  8. Sprinkle with the remaining 1 cup of shredded cheese.
  9. Bake for an additional 3 to 5 minutes or until a knife inserted in the center comes out clean.
  10. Let stand for 10 minutes before cutting and serving.
