Impossibly Easy Quesadilla Pie

- Preheat oven to 400°F (200°C). Spray a 9-inch pie plate with cooking spray.
- Melt butter in a 10-inch skillet over medium heat. Cook chopped onion in butter, stirring, until tender. Remove from heat.
- Stir in chopped tomato, drained green chilies, drained olives, 1 cup of shredded cheese, ground cumin, and salt.
- Spread the vegetable mixture evenly in the prepared pie plate.
- In a bowl, stir together Bisquick mix, milk, and eggs until well blended.
- Pour the Bisquick mixture over the vegetable mixture in the pie plate.
- Bake uncovered for 30 minutes.
- Sprinkle with the remaining 1 cup of shredded cheese.
- Bake for an additional 3 to 5 minutes or until a knife inserted in the center comes out clean.
- Let stand for 10 minutes before cutting and serving.
