Ingredients

  • 4 servings packaged instant mashed potatoes
  • skim milk
  • 1 (10 oz.) package frozen peas and carrots
  • 1 1/2 cups cubed cooked lamb or beef
  • 1 (12 oz.) jar beef gravy
  • 1/2 teaspoon dried basil
  • 1 tablespoon shredded Cheddar cheese

Instructions

  1. Prepare mashed potatoes according to package directions, omitting butter and substituting skim milk for milk; set aside.
  2. In a mixing bowl, stir together the thawed peas and carrots, cooked lamb, beef gravy, and dried basil.
  3. Divide the mixture among four 12 to 16-ounce casseroles.
  4. Top each casserole with the prepared mashed potatoes and sprinkle with shredded Cheddar cheese.
  5. Bake, uncovered, in a 350°F oven for 30 to 35 minutes or until heated through and bubbly.
