Ingredients

  • 1 cup fat
  • 1 cup sugar
  • 3 large eggs
  • 1 1/2 cups flour
  • 2/3 cup raisins soaked with rum to cover

Instructions

  1. Combine fat and sugar; cream until very light.
  2. Add eggs; then add flour.
  3. Fold in soaked raisins and rum.
  4. Pour batter into a loaf pan.
  5. Bake in a preheated oven at 350°F for 1 hour, checking at 45 minutes.
  6. Bake until the cake begins to pull away from the sides of the pan and a straw inserted into the center comes out clean.
  7. Do not overbake.
