Ingredients

  • 1 pkg. lemon cake mix
  • 1 stick margarine
  • 1 egg
  • 1 cup Rice Krispies
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Using an electric mixer, combine melted margarine and egg.
  3. Mix in the lemon cake mix and lemon juice (if using).
  4. The batter will be very thick.
  5. Add Rice Krispies and mix using a beater or by hand.
  6. Drop teaspoonfuls of batter onto a greased cookie sheet.
  7. Bake for approximately 8 minutes, do not brown.
  8. Let cookies cool briefly, then transfer to a paper towel-lined surface.
  9. Store in a covered container.
