Ingredients

  • 2 cups skim milk
  • 2 tablespoons vinegar
  • 4 cups flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons margarine
  • 2 teaspoons caraway seed
  • 1 cup raisins

Instructions

  1. Place vinegar in a 3-cup mixing bowl.
  2. Add enough milk to make 2 cups in the bowl with vinegar.
  3. In a separate bowl, combine flour, sugar, salt, baking soda, and baking powder.
  4. Add margarine, caraway seed, and raisins to the dry ingredients.
  5. Mix together lightly with a fork.
  6. Add the milk mixture to the dry ingredients, stirring with a fork, but do not overmix.
  7. Put the batter into a greased loaf pan or 8-inch cake pan.
  8. Pour melted margarine over the top of the batter.
  9. Sprinkle with 2 teaspoons of sugar.
  10. Bake at 375°F for 10 minutes.
  11. Lower the temperature to 350°F and bake for an additional 55 to 60 minutes, or until it tests done.
