Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 tablespoon butter
  • 1 can whole new potatoes, drained and sliced
  • 1 can stewed tomatoes
  • 1 can cut green Italian beans, drained
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a skillet, sauté onion and green pepper in butter until soft.
  2. Add sliced potatoes and sauté for 2 minutes, then add stewed tomatoes.
  3. Cook over high heat until slightly thickened.
  4. Add drained green Italian beans.
  5. Heat thoroughly.
  6. Sprinkle with grated Parmesan cheese before serving.
