Ingredients

  • 1 1/2 to 2 lb. codfish
  • 2 Tbsp. olive oil
  • 2 small onions
  • 10 to 12 pitted olives
  • 1 stalk celery
  • 1/4 cup capers
  • 1 can peeled tomatoes
  • salt to taste
  • pepper to taste

Instructions

  1. Soak codfish overnight in cold water, changing the water several times.
  2. Saute chopped onions, cut-up olives, celery, and washed capers in olive oil, stirring occasionally.
  3. Add crushed peeled tomatoes, salt, and pepper to the sautéed mixture.
  4. Simmer the tomato mixture for about 5 minutes.
  5. Add the soaked codfish to the sauce.
  6. Add enough water to cover the fish and simmer for 20 to 25 minutes.
  7. Peel and quarter the potatoes, then cook them separately or add to the pot as desired.
