Ingredients

  • 2 lb. haddock fillets
  • 1 lb. fresh tomatoes, seeds removed, chopped
  • 1 Tbsp. chopped parsley
  • 1 large garlic clove, chopped
  • pinch of dried tarragon
  • pinch of dried mint
  • salt and pepper to taste
  • 5 Tbsp. olive oil

Instructions

  1. Place haddock fillets in a buttered oven baking dish.
  2. Mix chopped fresh tomatoes, chopped parsley, chopped garlic, dried tarragon, dried mint, salt, and pepper.
  3. Spread the tomato mixture evenly over the fish.
  4. Drizzle with olive oil and sprinkle with Parmesan cheese.
  5. Bake in a 350°F (175°C) oven for about 20 minutes until the cheese is melted and the tomatoes are soft.
