Italian Macaroni Salad is a creamy, flavorful dish featuring pasta, cottage cheese, sour cream, and fresh vegetables, perfect for picnics, potlucks, or family dinners.

Ingredients

  • 1 lb. small shell macaroni
  • 1/2 cup Italian salad dressing
  • 2 cups cottage cheese
  • 2 cups sour cream
  • 1 cup diced celery
  • 1/2 cup diced green pepper
  • 1/2 cup milk
  • 2 Tbsp. sliced green onions with tops
  • 1 tsp. salt
  • 2 hard-cooked eggs, chopped

Instructions

  1. Cook macaroni until tender, then drain well.
  2. While still hot, toss the macaroni with Italian salad dressing and let stand for 30 minutes.
  3. Add cottage cheese, sour cream, diced celery, green pepper, sliced green onions, chopped eggs, milk, and salt.
  4. Mix well and chill before serving.
