Ingredients

  • 1 or 2 squirrels, cleaned and cut up
  • 1 pkg. wide noodles
  • 1 can sliced mushrooms
  • 1 can cream of mushroom soup
  • 1 soup can water
  • 1/3 c. bacon drippings
  • 1/2 c. chopped yellow onion
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1/4 tsp. garlic salt
  • salt

Instructions

  1. Inspect the squirrel to ensure all buckshot has been removed.
  2. Put the cut-up squirrel, berries, and 1/2 cup salt in a non-aluminum bowl and cover with water.
  3. Refrigerate overnight.
  4. Drain the squirrel and set aside.
  5. In a large skillet, heat 1/3 cup bacon drippings over medium heat.
  6. Add 1/2 cup chopped yellow onion and cook until translucent.
  7. Stir in dried oregano and basil, garlic salt, salt, and pepper.
  8. Add sliced mushrooms and cook until tender.
  9. In a separate pot, cook wide noodles according to package instructions; drain and set aside.
  10. Mix cream of mushroom soup and water in a saucepan and heat until smooth.
  11. Combine cooked squirrel, mushroom mixture, and cooked noodles.
  12. Simmer together for 15-20 minutes to meld flavors.
  13. Serve hot.
