Ingredients

  • 3 lb. frying chicken
  • 1 Tbsp. oil
  • 1 medium onion, diced
  • 2 to 3 green onions, sliced
  • 1 large tomato, diced
  • 1 bay leaf
  • 1 Tbsp. tomato paste
  • 3 1/2 cups weak chicken broth
  • 1/2 cup peanut butter
  • 1 tsp. salt
  • 1 tsp. cayenne pepper

Instructions

  1. Wipe chicken dry; brown in oil 5 to 10 minutes, turning 2 to 3 times.
  2. Add diced onions, sliced green onions, diced tomato, and tomato paste; cook for 1 minute.
  3. Stir in chicken broth and bring to a boil.
  4. Cover and boil for 8 minutes.
  5. Turn heat to low.
  6. Mix peanut butter with warm water to make a paste and add this to the chicken.
  7. Add salt, cayenne pepper, and bay leaf.
  8. Simmer for 30 minutes.
