Ingredients

  • 1 cup water
  • 1/3 cup plus 1 tablespoon gelatin (unflavored)
  • 1 1/2 cups boiling water
  • 2 cups raw cashews
  • 1/2 cup yeast flakes
  • 1 tablespoon salt
  • 2 teaspoons garlic powder
  • 1/2 cup lemon juice
  • 3 tablespoons finely grated carrot

Instructions

  1. Soak gelatin in 1 cup water in the blender while assembling remaining ingredients.
  2. Pour boiling water over soaked gelatin and blend briefly to dissolve.
  3. Cool the mixture slightly.
  4. Add cashews and blend until thoroughly liquefied.
  5. Add remaining ingredients: yeast flakes, salt, garlic powder, lemon juice, and grated carrot.
  6. Blend until the mixture reaches the consistency of a creamy sauce with no bits of carrot visible.
  7. Pour into a 1-quart mold and cool slightly.
  8. Cover and refrigerate overnight before serving.
  9. After firming in the refrigerator, the cheese may be frozen until needed.
