Ingredients

  • 2 c. cake flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 1/4 c. sugar
  • 1/2 c. shortening
  • 3/4 c. milk
  • 1 tsp. vanilla
  • 2 eggs
  • 2 egg whites
  • brown sugar
  • nuts

Instructions

  1. Sift the cake flour, baking powder, salt, and sugar into a large mixing bowl.
  2. Add shortening, milk, and vanilla to the dry ingredients.
  3. Beat with an electric mixer for 2 minutes at low speed.
  4. Add the unbeaten eggs to the mixture.
  5. Beat for 1 minute longer until well combined.
  6. Pour the batter into a greased 8 1/2 x 13 1/2 x 2-inch pan.
  7. Sprinkle with brown sugar and nuts on top before baking (if desired).
  8. Bake in a preheated oven at 350°F (175°C) for about 30 minutes, or until a toothpick inserted in the center comes out clean.
