Ingredients

  • 10 pieces Jack salmon fillets
  • 1 1/2 cups cornmeal
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup cooking oil
  • 1 pound spaghetti
  • 2 tablespoons cooking oil
  • 1 bell pepper
  • 1 onion

Instructions

  1. Preheat oven for rolls and prepare as needed.
  2. Mix cornmeal, salt, and pepper in a shallow dish.
  3. Dredge the salmon fillets in the cornmeal mixture.
  4. Heat 1/4 cup cooking oil in a skillet over medium heat.
  5. Cook the coated salmon fillets until golden brown on both sides, then transfer to the oven to finish cooking.
  6. In a separate pan, heat 2 tablespoons cooking oil.
  7. Add diced onion and cook until translucent.
  8. Add diced bell pepper and cook until tender.
  9. Stir in tomato paste and cook for 2 minutes.
  10. Combine cooked spaghetti with the vegetable mixture and toss well.
  11. Serve the fried salmon fillets atop the fried spaghetti garnished as desired.
