  1. Read Jack and the Bean Stalk.
  2. Soak the dried beans in water overnight or for at least 8 hours.
  3. Drain the soaked beans and rinse them well.
  4. In a skillet, cook bacon until crispy or heat cooking oil if using.
  5. Add chopped onion to the bacon or oil and sauté until translucent.
  6. Combine beans, cooked bacon or oil, sautéed onion, salt, and pepper in the Crock-Pot.
  7. Add enough water to cover the ingredients.
  8. Set the Crock-Pot to low and cook for 6-8 hours until beans are tender.
