Jacque'S Soup
Ingredients
- 1 Tbsp. virgin olive oil ⓘ
- 1/2 Tbsp. unsalted butter
- 1 leek (about 3 oz.), clean and cut 1/2-inch pieces ⓘ
- 1 medium onion, peeled and coarsely chopped ⓘ
- 2 carrots, peeled and cut into 1/2-inch pieces ⓘ
- 1 c. vermicelli pasta ⓘ
- 1 zucchini (4 oz.), trim and cut into 3/4-inch pieces ⓘ
- 4 mushrooms, coarsely chopped (1 c.) ⓘ
- 1 sweet yam (6 oz.), peel and cut into 1/2-inch pieces
- 7 c. water ⓘ
- 1 tsp. salt ⓘ
Instructions
- Heat oil and butter in a saucepan.
- When hot, add the leek and onions and saute for 2 minutes.
- Then add the carrots, zucchini, mushrooms and yams.
- Mix well and add the water, salt and pepper.
