Spicy jalapeno corn bread with a moist crumb and a hint of heat, perfect for casual gatherings or as a savory side dish with chili or BBQ.

Ingredients

  • 3/4 cup plus 2 Tbsp. water
  • 2/3 cup frozen whole kernel corn, thawed
  • 2 Tbsp. margarine, softened
  • 1 Tbsp. Jalapeno chili pepper, seeded and finely chopped
  • 3 1/4 cups bread flour
  • 1/3 cup corn meal
  • 2 Tbsp. sugar
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. salt

Instructions

  1. Measure carefully, placing all ingredients in the bread machine pan in the order given.
  2. Select the Basic/White cycle on the bread machine.
  3. Use medium or light crust color setting.
  4. Do not use the Delayed Cycle setting.
  5. Remove the baked bread from the pan once baking is complete.
  6. Cool the bread on a wire rack before slicing.
