Ingredients

  • 1 can jalapeno peppers
  • 10 oz. grated cheese
  • 4 eggs
  • whole kernel corn, drained

Instructions

  1. Line the bottom of a casserole dish with chopped jalapeno peppers.
  2. Cover the jalapenos with grated cheese.
  3. Beat the eggs and pour over the cheese and jalapenos.
  4. Pour the drained whole kernel corn over the mixture.
  5. Bake at 350°F (175°C) for 30 minutes.
