  • 2 (14 oz.) cans Del Monte Cajun-style stewed tomatoes
  • 8 oz. medium shrimp, shelled and deveined
  • 1/2 cup water
  • 6 oz. ham, diced
  • 1 cup uncooked rice, washed in hot water

Instructions

  1. In a heavy 4-quart saucepan, brown sausage over low heat.
  2. Drain tomatoes, reserving liquid.
  3. Add water to make 1 1/2 cups.
  4. Add to sausage and tomatoes the shrimp (or ham), reserved tomato liquid, and remaining ingredients.
  5. Bring to a boil and stir.
  6. Reduce heat to low.
  7. Simmer 30 to 35 minutes or until liquid is absorbed, stirring occasionally.
  8. Remove bay leaf.
  9. Serve hot.
