Ingredients

  • 10 potatoes
  • 16 oz. sour cream
  • 1 pkg. onion soup mix
  • 1/4 or 1/2 stick margarine
  • 1/2 cup Cheddar cheese shredded
  • bacon bits
  • chives

Instructions

  1. Mix the onion soup mix and sour cream together in a bowl.
  2. Bake the potatoes at 350°F for 1 hour.
  3. Remove from oven, cut potatoes in half, and scoop out the pulp into a bowl.
  4. Add the sour cream mixture and margarine to the potato pulp, then beat until smooth.
  5. Fill the potato skins with the mixture.
  6. Sprinkle shredded cheddar cheese, bacon bits, and chives on top.
  7. Reheat in a 325°F oven for 15 to 20 minutes until the cheese melts.
