Ingredients

  • 1 cup Tender Quick
  • 6 cups water
  • 2 teaspoons pepper
  • 6 tablespoons liquid smoke

Instructions

  1. Combine 1 cup Tender Quick and 6 cups water to create a curing solution.
  2. Submerge the sliced antelope or deer meat in the curing solution and refrigerate for 3 to 4 days, turning occasionally.
  3. Remove the meat from the cure and pat dry.
  4. Mix 2 teaspoons pepper and 6 tablespoons liquid smoke into the meat slices.
  5. Arrange the meat slices on dehydrator trays or baking sheets.
  6. Dry the jerky in a dehydrator at 160°F (71°C) for 4 to 6 hours until firm and dry.
  7. Store the finished jerky in airtight containers or bags.
