Ingredients

  • 2 sticks margarine
  • 2 cups sugar
  • 4 eggs
  • 1 cup shredded coconut
  • 1 (14 oz.) box graham cracker crumbs
  • 2 teaspoons baking powder
  • 1 cup milk
  • 16 oz. can crushed pineapple, drained
  • 1 cup chopped pecans

Instructions

  1. Cream sugar and margarine until fluffy.
  2. Add eggs one at a time and beat well.
  3. Stir in shredded coconut.
  4. Mix graham cracker crumbs and baking powder separately.
  5. Add alternately with milk to the egg mixture.
  6. Stir in drained crushed pineapple and chopped pecans.
  7. Pour batter into a greased 9 x 13-inch pan.
  8. Bake at 350°F for 1 hour.
