Ingredients

  • 15 soda crackers, crumbled
  • 2 Tbsp. melted margarine
  • 3 c. cubed eggplant (3/4-inch cubes)
  • 1/2 c. shredded cheese
  • 1/4 c. chopped celery
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Preheat oven to 350°F.
  2. Combine crushed soda crackers and melted margarine until evenly coated.
  3. Reserve 1/4 cup of the cracker mixture for topping.
  4. Add cubed eggplant, shredded cheese, chopped celery, salt, and pepper to the remaining cracker mixture and toss to combine.
  5. Transfer the mixture into a greased casserole dish.
  6. Sprinkle the reserved cracker mixture on top as a topping.
  7. Bake uncovered for 45 minutes until bubbly and golden.
