Ingredients

  • 4 cups all-purpose flour
  • 3 cups sugar
  • 1 teaspoon salt
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 tablespoon plus 1 teaspoon nutmeg
  • 3 cups heavy cream
  • 6 large eggs
  • 1/4 cup dark rum or brandy

Instructions

  1. Heat oven to 350°F.
  2. Grease and flour four 7 1/4-inch pans.
  3. Mix flour, sugar, baking powder, and nutmeg in a large bowl.
  4. Add cream, eggs, and rum; beat with electric mixer on low speed for 1 minute until well blended.
  5. Increase speed to medium; beat for 3 minutes longer until thick.
  6. Pour batter into prepared pans.
  7. Bake for 45 to 50 minutes, or until a pick inserted in the center comes out clean.
  8. Cool in pans on wire rack for 10 minutes.
  9. Remove from pans; let cool completely.
