Ingredients

  • 6 eggs
  • 2 sticks margarine, softened
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 3/4 cup ground nuts
  • 2 tablespoons powdered sugar

Instructions

  1. Separate the eggs into yolks and whites.
  2. Beat the egg yolks, softened margarine, and sugar until well blended.
  3. Add the flour and baking powder to the mixture and mix well.
  4. Stir in the vanilla extract.
  5. Gently fold in the unbeaten egg whites until the mixture is smooth.
  6. Pour the batter into a greased jelly roll pan and spread evenly.
  7. Sprinkle the ground nuts evenly over the top of the batter.
  8. Bake at 350°F (175°C) for 20 to 25 minutes until golden.
  9. Allow to cool completely.
  10. Use a glass to cut out circles that overlap to resemble moons.
  11. Sprinkle powdered sugar over the cookies before serving.
