Ingredients

  • 8 oz. or 2 cups flour
  • 2 Tbsp. lard or butter
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. sugar
  • 1/4 pint or 2/3 cup milk

Instructions

  1. Sift dry ingredients into a bowl, then rub in the fat until the mixture resembles breadcrumbs.
  2. Pour milk in and stir to make a soft dough.
  3. Knead on a floured board, then refrigerate for 30 minutes.
  4. Break the dough into lemon-sized pieces, roll into balls, and flatten to 1/2 inch or 1 centimeter thickness.
  5. Fry these in hot oil until golden or bake in a hot oven, gas mark 7, 425°F or 220°C.
  6. While still hot, tear bakes open and butter generously.
