Ingredients

  • 1 lb. ground beef
  • 2 medium carrots, chopped fine
  • 1 medium chopped onion
  • 2 tsp. chili powder
  • 1 (28 oz.) can tomatoes
  • 1 large can red kidney beans, drained
  • 1 Tbsp. sugar
  • 1/2 tsp. oregano
  • 1 (10 oz.) frozen corn
  • 1 (8 1/2 oz.) pkg. corn muffin mix (can use Mexican cornbread)
  • 2 oz. shredded Cheddar cheese
  • 1/4 c. olives
  • 1/2 tsp. salt

Instructions

  1. Cook ground beef, carrots and onions until all juice is gone and meat is brown.
  2. Stir in chili powder; cook 1 minute.
  3. Stir in tomatoes with juice; add beans, sugar, oregano and salt.
  4. Heat to boiling.
  5. Reduce to simmer, uncovered for 20 minutes.
  6. Stir in frozen corn.
  7. Prepare muffin mix as label directs.
  8. Put cheese and olives in ground beef mixture.
  9. Put corn muffin mix into large decorating bag with writing tube and squeeze batter over ground beef mixture in lattice design.
  10. Can use a spoon for batter to create design.
  11. Bake at 400° for 15 minutes or until bread is done.
