Ingredients

  • 10 to 20 medium fresh mushrooms
  • 2 Tbsp. diced onion
  • 1 c. crumbled cheese crackers (Cheese Nips)
  • 1/2 c. shredded Cheddar cheese

Instructions

  1. Clean the mushrooms and carefully break out the stems.
  2. Drop mushroom caps into boiling water for about 2 minutes, then drain and cool.
  3. Mix diced onion, crumbled cheese crackers, and 1/4 cup of shredded Cheddar cheese into a paste.
  4. Fill mushroom caps with the cheese mixture.
  5. Top with remaining shredded Cheddar cheese.
  6. Bake at low heat (about 275° to 300°F) until cheese melts.
