Ingredients

  • 2 eggs
  • 1/2 tsp salt
  • 1 1/2 cups boiling water
  • 1 cup buttermilk
  • 1 Tbsp real butter
  • 1 cup white cornmeal

Instructions

  1. Pour the cornmeal into a bowl without sifting.
  2. Scald the meal by pouring boiling water over it and stirring to prevent lumps from forming.
  3. Add the water slowly, beating continuously.
  4. Add salt and butter and let the butter melt.
  5. Mix well and set aside to cool slightly.
  6. Add the beaten eggs mixed with buttermilk and 1/2 teaspoon salt.
  7. Beat well.
  8. Pour the mixture into a greased baking dish.
  9. Set in a hot oven at 450°F and bake for 30 to 40 minutes or until the mixture just sets and no longer shakers in the middle.
  10. Do not overcook.
  11. Serve immediately.
