Ingredients

  • 2/3 cup butter or margarine
  • 2 tablespoons salt
  • 1/2 cup flaxseed
  • 1/2 cup sesame seed
  • 1/2 cup crushed buckwheat or other grain
  • 1 quart milk
  • 1 cake yeast
  • 1/2 cup lukewarm water

Instructions

  1. Pour 3 cups boiling water over the first five ingredients (butter or margarine, salt, flaxseed, sesame seed, crushed buckwheat).
  2. When the butter has melted, stir in the milk and the dissolved yeast.
  3. Add the whole wheat flour and enough white flour to form a kneadable dough.
  4. Uncooked oatmeal and/or cooked mashed potatoes can be added with the milk if desired.
  5. Then decrease the white flour as necessary to achieve the right consistency.
  6. For added flavor and texture, whole walnuts or hazelnuts can be incorporated with the milk.
  7. Knead the dough thoroughly.
  8. Let the dough rise until doubled in bulk, then punch down and let rise again.
  9. Punch down the dough and divide into about five loaves.
  10. Let the loaves rise again, then bake about 45 minutes at 350°F.
  11. Bread will sound hollow when rapped with knuckles, indicating doneness.
