A creamy broccoli casserole with melted Velveeta and rice, topped with cracker crumbs, ideal for comforting family dinners or potlucks.

Ingredients

  • 1 stick oleo
  • 1/2 medium onion
  • 1 can cream of chicken soup
  • 1/2 cup condensed milk
  • 8 oz Velveeta cheese
  • 1 cup rice
  • 1 bunch broccoli or 1 package frozen broccoli

Instructions

  1. Saute the onion in butter until translucent.
  2. In a mixing bowl, combine the cream of chicken soup, condensed milk, and Velveeta cheese; stir until smooth.
  3. Add the soup mixture to the sautéed onion and cook until cheese is melted and mixture is heated through.
  4. Transfer the mixture into a baking dish.
  5. Add the rice and broccoli to the baking dish and stir thoroughly but carefully to combine.
  6. Sprinkle a layer of cracker crumbs over the top of the casserole.
  7. Bake at 350°F (175°C) for 45 minutes until bubbly and golden on top.
