Kahlua Stir-Fry Chicken

Ingredients

  • 1 1/2 lb chicken, boned, skinned, and cut into 1/2-inch pieces
  • 2 Tbsp beaten egg
  • 1/4 cup vegetable oil
  • 2 Tbsp cornstarch
  • 1/2 cup sliced water chestnuts
  • 6 asparagus tips
  • 1 green pepper, cut into 1/2-inch strips
  • 4 oz mushrooms, sliced
  • 4 oz snow pea pods
  • 3 Tbsp Kahlua
  • 1 tsp cornstarch

Instructions

  1. Coat chicken in beaten egg, 2 tablespoons vegetable oil, and cornstarch.
  2. Heat remaining oil in wok or skillet.
  3. Add chicken and cook until golden brown.
  4. Drain well.
  5. Remove all but 2 tablespoons oil from wok and heat.
  6. Add all vegetables except green onions.
  7. Stir-fry for 3 to 5 minutes.
  8. Add Kahlua mixed with cornstarch. Bring to a boil, then simmer to slightly thicken.
  9. Add cooked chicken and cashews.
  10. Heat through.
  11. Remove to serving platter.
  12. Garnish with green onions.
