Kalikenney is a hearty, cheesy casserole combining tender cabbage, creamy mashed potatoes, crispy bacon, and melted cheddar, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 1/2 small head cabbage, shredded 1/4-inch
  • 1 lb. potatoes, peeled, boiled and mashed
  • 1/4 cup heavy cream
  • salt to taste
  • pepper to taste
  • 1 cup grated Cheddar cheese
  • 4 Tbsp. butter

Instructions

  1. Cook the cabbage in a small amount of water until tender.
  2. Peel, boil, and mash the potatoes with heavy cream, salt, pepper, and butter.
  3. Stir the cooked cabbage into the creamed potatoes.
  4. Cook the bacon until crisp, then dice it.
  5. Add the diced bacon and grated Cheddar cheese to the cabbage and potato mixture.
  6. Put the mixture in a casserole dish and bake for about 15 minutes at 350°F.
