- Heat oven to 450°F (232°C).
- Lightly spoon self-rising flour into measuring cup; level off.
- In a large bowl, cut shortening into flour with a fork or pastry blender until the mixture resembles coarse crumbs.
- Add buttermilk; stir with a fork until the mixture leaves the sides of the bowl and forms a soft, moist dough.
- Add an additional 1 to 3 tablespoons of buttermilk if needed to reach desired consistency.
- Turn the dough onto a floured surface.
- Knead gently 6 to 10 times or until no longer sticky.
- Cut the block of cheese into chunks.
- Pinch off dough into 1/4 size balls, place a cheese chunk in the center, and roll into a ball.
- Gently press knuckles on top of each biscuit and place on an ungreased baking pan.
- Bake for 8 to 10 minutes until golden brown.
