Ingredients

  • 1 lb. mild Cheddar cheese
  • 1/4 cup shortening
  • 2 cups self-rising flour
  • 2/3 cup buttermilk

Instructions

  1. Heat oven to 450°F (232°C).
  2. Lightly spoon self-rising flour into measuring cup; level off.
  3. In a large bowl, cut shortening into flour with a fork or pastry blender until the mixture resembles coarse crumbs.
  4. Add buttermilk; stir with a fork until the mixture leaves the sides of the bowl and forms a soft, moist dough.
  5. Add an additional 1 to 3 tablespoons of buttermilk if needed to reach desired consistency.
  6. Turn the dough onto a floured surface.
  7. Knead gently 6 to 10 times or until no longer sticky.
  8. Cut the block of cheese into chunks.
  9. Pinch off dough into 1/4 size balls, place a cheese chunk in the center, and roll into a ball.
  10. Gently press knuckles on top of each biscuit and place on an ungreased baking pan.
  11. Bake for 8 to 10 minutes until golden brown.
