Ingredients

  • 2 lb. fresh or frozen shrimp in shells
  • 1 cup sifted all-purpose flour
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 slightly beaten egg
  • 2 tablespoons salad oil
  • 2/3 cup grated coconut

Instructions

  1. Cook 1 pound of shelled shrimp; drain and set aside.
  2. In a saucepan, melt 1/4 cup butter or margarine.
  3. Stir in 3 tablespoons all-purpose flour.
  4. Add 1 1/2 cups milk all at once; cook and stir until thickened and bubbly.
  5. Add cooked shrimp, 1/4 cup dry sherry, 1/2 teaspoon salt, dash pepper, and dash paprika.
  6. Pour the mixture into 5 coquilles (individual baking shells).
  7. Sprinkle each serving with 1 tablespoon grated coconut.
  8. Broil 3 to 4 inches from the heat until the coconut is browned.
