Kasha pilaf is a hearty, nutty grain dish infused with sautéed mushrooms and onions, perfect as a flavorful side for vegetarian or meat-based meals alike.

Ingredients

  • 12 to 16 oz. sliced mushrooms
  • 2 large onions, diced
  • 2 to 4 Tbsp. olive oil
  • 1 c. medium kasha
  • 1 beaten egg
  • 2 c. boiling water

Instructions

  1. Saute onions and sliced mushrooms in olive oil until softened.
  2. Mix in the medium kasha moistened with the beaten egg.
  3. Stir over medium-high heat for about 2 to 3 minutes or until kernels are separate.
  4. Reduce heat and add boiling water.
  5. Cover the pan tightly.
  6. Simmer for 8 to 11 minutes or until kasha kernels are tender and liquid is absorbed.
