Juicy stuffed peppers filled with savory beef, corn, and tomatoes, baked to perfection with a crispy topping—comforting and flavorful, ideal for family dinners or gatherings.

Ingredients

  • 4 medium or large peppers
  • 1 lb ground beef
  • 1 medium onion
  • 1 (14 oz) can corn
  • 1 (16 oz) can stewed tomatoes
  • salt and pepper

Instructions

  1. Cut off the tops of the peppers, remove seeds, and set aside.
  2. Place peppers in a large pan, cover with water, and bring to a boil.
  3. Cook until semi-soft but still firm enough to fill, approximately 8 to 10 minutes.
  4. Drain peppers on paper towels and set aside.
  5. In a large frying pan, cook ground beef and sliced onion until beef is browned.
  6. Add corn, stewed tomatoes, salt, and pepper; cook until vegetables are heated through.
  7. Preheat oven to 350°F (175°C). Dot the bottom of a small roasting pan or casserole dish with margarine or butter.
  8. Place drained peppers in the prepared dish.
  9. Stuff each pepper with the beef and vegetable mixture.
  10. Top each pepper with bread crumbs, dot with butter or margarine, and sprinkle paprika.
  11. Bake in the oven for 35 minutes until golden and bubbly.
  12. Serve over cooked rice.
