Kay'S Stuffed Peppers
Juicy stuffed peppers filled with savory beef, corn, and tomatoes, baked to perfection with a crispy topping—comforting and flavorful, ideal for family dinners or gatherings.

- Cut off the tops of the peppers, remove seeds, and set aside.
- Place peppers in a large pan, cover with water, and bring to a boil.
- Cook until semi-soft but still firm enough to fill, approximately 8 to 10 minutes.
- Drain peppers on paper towels and set aside.
- In a large frying pan, cook ground beef and sliced onion until beef is browned.
- Add corn, stewed tomatoes, salt, and pepper; cook until vegetables are heated through.
- Preheat oven to 350°F (175°C). Dot the bottom of a small roasting pan or casserole dish with margarine or butter.
- Place drained peppers in the prepared dish.
- Stuff each pepper with the beef and vegetable mixture.
- Top each pepper with bread crumbs, dot with butter or margarine, and sprinkle paprika.
- Bake in the oven for 35 minutes until golden and bubbly.
- Serve over cooked rice.
