Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup cooking oil
  • 2 cups self-rising flour
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1.5 cups chopped walnuts
  • 4 to 5 cups thinly sliced apples

Instructions

  1. Beat eggs with a mixer until thick and light.
  2. Combine sugar and oil, then pour into eggs with the mixer on medium speed.
  3. In a separate bowl, stir together self-rising flour and cinnamon.
  4. Add the flour mixture and vanilla to the egg mixture and beat to combine.
  5. Stir in chopped walnuts.
  6. Spread sliced apples evenly in a buttered 13 x 9 x 2-inch pan.
  7. Pour the batter over the apples, spreading to cover the apples completely.
  8. Bake in a 350°F oven for 1 hour.
  9. Remove from oven and cool.
  10. Spread with Cream Cheese Icing before serving.
