Ingredients

  • 1 1/2 cups corn meal
  • 1 1/2 teaspoons salt
  • 1 egg, beaten
  • 1 teaspoon baking soda
  • 3 tablespoons flour
  • 2 cups buttermilk
  • 2 tablespoons bacon drippings or melted butter

Instructions

  1. Sift dry ingredients into a bowl.
  2. Add buttermilk and beaten egg.
  3. Stir only enough to moisten dry ingredients.
  4. Heat two 8-inch cast iron skillets in the oven.
  5. Pour enough bacon drippings or melted butter into each skillet to moisten and coat them.
  6. Pour half of the prepared batter into each skillet.
  7. Bake at 450°F for 20-25 minutes, until golden on top.
