Ingredients

  • 2 lb ground beef
  • 2 c bulgur
  • 1 onion, minced
  • salt and pepper to taste
  • 2 qt water
  • 2 c khishk
  • 1/2 head cabbage
  • 2 Tbsp dried mint, crumbled
  • 2 tsp cooking oil

Instructions

  1. Soak the bulgur in warm water for at least 15 minutes.
  2. Squeeze the bulgur dry and mix with ground beef and minced onion.
  3. Add salt and pepper, mix well, and form into balls of approximately 1 to 2 inches across. Set aside.
  4. In a large kettle, bring the water to a rapid boil and add the khishk, stirring constantly.
  5. Reduce heat to medium and stir occasionally for at least 30 minutes until the khishk thickens slightly.
  6. While the khishk is cooking, cut the cabbage into 1/2-inch strips and parboil until almost done.
  7. In a small skillet, cook the dried mint in the oil on low heat for a few minutes.
  8. Add a spoon of khishk to the skillet with mint, then dump the contents into the kettle.
  9. Add the beef balls and cook for at least 30 minutes.
  10. Add the cabbage and serve in large bowls like soup.

Tips & Substitutions

For an extra flavor boost, try adding spices like allspice or cinnamon to the ground beef mixture. If bulgur is unavailable, quinoa can be a great substitute. Ensure the khishk is well dissolved in water to prevent clumping. Adjust the thickness of the khishk based on your preference; if you want it thicker, simmer longer, similar to how you would with Old World Sauerbraten.

Serving Suggestions

Serve Kibbee Khishk in large bowls to highlight its soup-like consistency. A dollop of yogurt on top adds creaminess, while a side of fresh pita or crusty bread complements the dish perfectly. It pairs beautifully with Delicious Rice, making for a hearty meal that satisfies.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, gently warm on the stove over low heat, adding a splash of water if necessary to prevent drying out. You can also use a microwave, ensuring it is covered to retain moisture.
