Ingredients

  • 1/4 cup oil
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 large onion
  • 1 bell pepper
  • 1/2 cup celery hearts
  • 1 tablespoon roux
  • 3 medium eggplants, peeled and diced
  • 4 cups water
  • 2 cups raw shrimp
  • 1 cup green onions
  • 3 cups cooked, hot rice

Instructions

  1. Brown the ground beef and pork in oil.
  2. Add the chopped onion, bell pepper, and celery; sauté until vegetables are tender.
  3. Add the roux and diced eggplant; stir well to combine.
  4. Pour in water and stir.
  5. Let cook on medium-low heat for 3 hours, adding small amounts of water as needed to maintain consistency.
  6. Cook until the stock becomes brown and thickened.
  7. Add the raw shrimp and cook for an additional 20 minutes.
  8. Stir in cooked hot rice and green onions; mix well and cover.
  9. Let sit for 10 minutes before serving.
